In the ripe nose, we find aromas of black cherries, cassis, vanilla, white pepper, and a beautifully balanced touch of cedar. On the palate, these impressions are further revealed and completed with notes of leather, spices, nutmeg, and a hint of cocoa. In the finish, all these flavors meld into a wonderfully long, balanced, and pleasant aftertaste.

A royal companion to hearty meat dishes such as aged entrecôte and other delights from beef, leg of lamb, risotto with wild mushrooms, and roasted eggplant with Parmesan.

climate

The warm climate of Paso Robles is Mediterranean. Warm, dry summers and mild winters. The altitude of Adelaida and the proximity to the ocean in Willow Creek provide these regions with more cooling and temperature variation, which enhances the structure and liveliness of the wine. Cabernet Sauvignon finds an ideal climate here to ripen slowly and optimally.

40% de raisins du Santa Margarita Ranch au sud de Paso Robles, 38% de raisins des collines plus élevées d'Adelaida et 22% de la sous-appellation Willow Creek (la plus proche de l'océan et donc la région la plus fraîche de Paso Robles). vinification

90% Cabernet Sauvignon, 10% Cabernet Franc. The grapes were all handpicked in the coolness of the night. Each plot was fermented separately with regular pigeage. After fermentation, the wine aged in a mix of new French barrels (30%), new hybrid barrels (French/American 10%), and neutral used French barrels to bring balance to the wine. After a year (depending on the vintage), the final blend is made and the wine is bottled.
