Beautiful, light, golden yellow color. Soft, creamy nose with impressions of nectarine, white blossom and a fine touch of pineapple evolving into a bouquet of honey and spices. Tasty, fresh and lively style that touches the palate at the same time dry and mild. Its mineral character extends into the final and keeps the wine interesting.
Perfect as a soft and dry aperitif. Its clean, not wooded style can be enjoyed with white meats and poultry, various fish (fried or grilled) and with a varied selection of soft to medium soft cheeses.

The Cévennes have a Mediterranean climate (warm, dry summers and mild winters) that is strongly influenced in the intermediate seasons by cooling winds from the north and by rains and coolness coming from the Pyrenees. There can sometimes be a lot of precipitation in a short time. These temperature fluctuations (also during the night) guarantee a longer and better ripening of the grapes.

The massif of the Cevennes is one of the last foothills of the Massif Central and is mainly dominated by calcareous soils with clay and boulders.
- vinification

Manual picking. Careful pressing of the grapes after which the impurities are removed from the juice before the fermentation starts (=débourbage). Fermentation in stainless steel vats under controlled temperature (15-18°C). The wine is then bottled 5 to 6 months later.
